Growing up in Ho Chi Minh City, a thriving metropolis in the southern part of Vietnam, I had the opportunity to eat some of the best and freshest Asian street food in the world. I have memories of indulging in a bowl of Pho Bo — beef noodle soup, bursting with umami flavors on the streets of my hometown and bitting into a lemongrass pork Banh Mi on my way home from school. The memories of my childhood and my passion for food have inspired me to create Momo Express, named after my cat- Momo. Through my business, I want to bring a modern take on traditional Vietnamese street food to every corner of Seattle. Trained with chefs specializing in the art of Chinese, Japanese and Vietnamese cooking, I try to incorporate elements from all three cuisines into my own food. My cooking is primarily focused on popular Vietnamese dishes and traditional flavors with a modern twist. Fresh and locally sourced herbs and vegetables are fundamental to the food that I make and are the base for many of my dishes.
